If you don’t have a pizza pan, use regular parchment paper. Brush it with olive oil and sprinkle it over the corn as shown below, then press the dough into a shape. Make sure the dough is 1/2 inch thick. Roll out the dough longer for a thinner pizza.

Prepare the dough from step 3 below, but allow the dough to rise in the refrigerator for 8-12 hours. (If you have to refrigerate for a long time, use cold water on the dough, which slows down the rise and will take longer.) As a bonus, the slow rise makes the pizza dough taste great! When you’re ready, continue with step 5 in the recipe below (the shaping step). If the dough doesn’t double in size when it rises, let it sit at room temperature for 30-45 minutes before proofing.

This recipe yields two 12-inch pizzas. After the pizza dough has risen and you’ve divided the dough into two pieces (step 5), you can freeze a ball of dough to make pizza later. Making the Dough – Place the flour and salt in a large bowl and pour a little in the middle. Add warm water and mix with a spoon. Once the dough starts to come together, add the olive oil (pictures 1-4).

Knead – To form a ball, place the dough on a lightly floured work surface, do not knead, it only takes a minute or two and it’s done (pictures 5-7).

Roll out the dough – To make two large pizzas to share, or divide into four to make individual pizzas, and roll out very thinly (about 3mm) on a lightly floured work surface (Figure 8).

Preheat the oven – Remove the preheated bread or pizza pans from the oven and lightly dust them with flour or semolina and carefully place the pizza base (Figure 9).

How To Make And Freeze Pizza Dough

Simmer and Bake – Add your desired toppings and bake for about 10 minutes or until puffed and golden brown.

There is no baking powder in this recipe because it tends to dry out the dough, but if you want to make a thicker crust instead of a thin and puffy one, I recommend adding about ½-1tsp to lighten the dough.

Preheat your oven and pizza pans to the highest temperature so that when you add the pizza dough, the base will begin to cook immediately. If you’re going heavy on the toppings or using a lot of moisture, I recommend baking the pizza crust for 5-10 minutes, then add toppings and bake until golden.

Yeast dough isn’t perfectly browned, but that doesn’t mean it’s undercooked or puffed up. To achieve a golden brown crust, add ½ teaspoon of sugar to the dough and brush the raw crust with olive oil to give it extra color.
