While I’m sad that we won’t be with our extended family for a traditional gathering, I’ll put on my thinking cap and figure out how to make it a special day just for the three of us. I got a few little surprises from the Easter Bunny for Jane’s basket and I’m hoping the weather will be in our favor for a little egg hunt in the backyard. My favorite tradition as a child was a big Easter dinner. It’s such a fond memory from my childhood that I devoted an entire chapter to it in my cookbook, New England Invite. I thought I’d share some of my favorite ideas from the Easter brunch chapter that are easy to recreate at home on a smaller scale for this year’s celebrations.

Breakfast Strata Casserole. This is one of my all-time favorite brunch recipes because you make it the night before. Wake up in the morning and pop it in the oven while you enjoy mimosas and hunt for Easter eggs. It’s also a great way to use up leftover ingredients like cooked sausage, cheese and herbs; You can throw in some roasted peppers and onions if you have them on hand. And the base of the dish uses crusty bread; I actually save my bread in a bag in the fridge for this dish – just thaw the bread and toast it a bit before soaking with the egg and milk mixture in the recipe. It also tastes great as leftovers, so make it for Easter and then have a delicious breakfast for the week.

These Mother’s Day Brunch Recipes Will Make Any Mom Smile

Yogurt Parfaits. There’s not much to a yogurt parfait, the ingredients are something you could eat for breakfast any day of the week, but the nice layers of yogurt and granola and fruit assembled in individual bowls or bowls make them feel really special. If you don’t have small jars like the ones I used, stemless wine glasses will work too!

Crispy Hashbrowns. The Crispy Cheddar Scallion Hashbrown recipe in my cookbook is versatile and can be adapted to what you have on hand. It works with both regular potatoes and frozen pre-shredded potatoes, and you can mix in whatever herbs or cheese you have to make it your own. The recipe in the book serves 6, but cut all measurements in half to make it a smaller portion.

Homemade donuts. I have a recipe for orange-poppyseed donuts in my cookbook chapter, and I have a similar recipe for lemon-flavored donuts on the blog. Baking at home with Jane has been such a fun activity while we social distance, and I think I’ll have to break out the donut pan for our next baking project. I won’t tell you how to cut this recipe into smaller portions, because I guarantee you can eat them all!

More Easter ideas. I recently shared a simple Easter tablescape on the blog, and have a great roundup of 20 Easter recipes, DIYs, and entertaining ideas full of inspiration for the holiday. A few of my favorites are my Easter Grass Board, a simple toddler Easter snack idea, and cute little Rice Krispie Bunny treats that will be fun to make with the kids.A brunch spread that has something for everyone. Roasted potatoes, crispy bacon, smoked salmon, eggs, tomatoes with burrata, bagels, naan, and all the cream cheese and spreads every brunch needs…and then some. Potatoes and bacon are cooked together on a sheet pan, and the rest of the board consists of a mix of store-bought lettuce, fruits, and vegetables, making this an easy way to serve brunch to a group.

Simple Homemade Brunch Recipes Anybody Can Make

Guys…oh this is spreading. I am so excited and so nervous to share it with you. This is one of the most delicious brunch spreads I’ve ever put together so I’m excited for obvious reasons. But why am I worried?

Well, this isn’t really a “recipe”. I mean, it’s a recipe, but it’s more of a concept. There’s a lot going on in this brunch board. I have a few specific items that I really feel should be included. The rest of what I’m about to tell you is really just more of my suggestions. I want you to be able to get some ideas from me and then put your own spin on this brunch board. Adapt it to your favorite flavors and foods!

I know this is really not a cause for panic. But this is not your traditional recipe. I want you to walk away excited and confident that you can take these spring brunch ideas and recreate this board at home, you know?

Breakfast Enchiladas: Festive Make Ahead Christmas Brunch

These items make up the bulk of the board, and are the items I think you should include. For some more optional items I really want to encourage you to play with. Choose spreads, vegetables and fruits that you, your friends and family will love.

My recommendations? Oil, fruit jam, honey, avocado, fresh berries, and a lot of vegetables, hot pepper. My suggestions are cucumber, radish and red onion.
