Donuts are my love language. They’re really the first thing I look for when I’m out on the town, and they’re my favorite Saturday morning pastime.

So of course I had to go to the local donut show when it was happening here in my home state. (You can watch the video! – if you are interested!)
This Easy Cake Donut is inspired by that Saturday morning donut indulgence. I wanted to make a donut at home that was quick, easy, and delicious. I think I nailed all three with this recipe!
There are many different types of doughnuts, but I always feel like there are two main types: cake doughnuts and yeast doughnuts. The difference is in the yeast.
Oil: This is for frying the fritters, so you’ll want something neutral. I like to use vegetable oil, but canola oil or peanut oil will also work. Just make sure it’s fresh oil – don’t fry your fritters in oil you’ve fried something else in, as the flavors will transfer.
Mini Baked Donuts With Sprinkles
Sugar: The dough will be slightly sweetened by the sugar. You want to use regular granulated sugar for this recipe.
Vegetable shortening: The shortening will give the fritters a great texture. You can use butter, but I think vegetable shortening is superior here for texture.
Vanilla: I don’t use a lot of vanilla in this recipe, but you can always add more for a more pronounced vanilla flavor.
Baking Soda: This recipe is a little different than the others as it uses baking soda and no baking powder. They end up a little denser, like old-fashioned doughnuts, instead of super light and fluffy. But between the baking soda, buttermilk, and egg, the donut will still have plenty of rise and a nice texture.
Homemade Cake Donut Recipe
Nutmeg – This is my secret ingredient! Just a touch of nutmeg at the bottom gives these donuts a special flavor.
Donut Frosting: I like to make a simple frosting with butter, powdered sugar, milk, and extracts. My favorites are vanilla and almond extract. You can also make a simple chocolate frosting. Add sprinkles or cinnamon sugar or toasted coconut – you can get creative!
One of the reasons I chose to make these donuts is because they are easy. Basically just mix everything together and then fry the batter! But here are some tips to make it even easier.
This recipe has not been tested as a baked doughnut. I would suggest using a recipe written like a baked donut for best results.
Baked Donut Recipe Without Yeast
You don’t! I actually have a deep fryer, but I find my dutch oven works easier for me. You can even use a heavy pan (like a cast iron pan) and shallow fry them.
This recipe is intended for frying, so I would suggest using a recipe written for an air fryer.
Donuts are best served the same day they are made. They will lose their crispy exterior quickly. You can store them for several days and they will still taste good, but the texture will not be the same.
You can store them in an airtight container, but I prefer something that lets them breathe a little, like a paper bag or donut box.

If you keep them in the fridge, they will last a few more days. Also, try to keep the donuts away from any kitchen windows because the sun will cause the glaze to melt! As with any donut, these homemade cake donuts are best eaten the same day they’re made. But if you have leftovers (I bet you don’t!), they can keep at room temperature for 2-3 days.
