The donuts are super light and fluffy – the dough is oil-based, not butter-based, so the donuts have a slightly lighter flavor, perfect for a delicious spread of tangy cinnamon sugar. Simple Homemade Sugar Donuts

These Cinnamon Sugar Donuts are pretty easy – not too many steps! The dough can be made ahead of time so it just hangs in the fridge, ready for you!

I use Filippo Berio Extra Light Olive Oil for this cinnamon sugar donut recipe (and all my baked donut recipes). It has a high smoke point (410°f to 446°f), making it great for grilling. Does not smell at home. While I love a good fruity olive oil, I also love this extra light one from Filippo Berio. Extremely light in taste, it can be used for any purpose that uses a neutral oil.

I used the oil not only to bake the doughnuts, but also in the dough, which provided moisture and fat, keeping it light and cold. I absolutely love brioche donuts, but there’s something special about the lightness and fluffiness of these oil-based donuts. Not to mention, the batter comes together super fast – you just throw it in the mixer and it does its job, no butter needed!

For this reason, this recipe is best made without a blender if you want to make it by hand. Simply pour everything into a bowl and mix, then turn out onto a surface and knead until smooth and elastic. It may take a while to come together, but try not to add more flour if you can. You may need to use a bench scraper to help move the dough while you prepare it.
