How To Make Healthy Ice Cream At Home – This is something completely new to my blog, but yesterday I had a sudden urge to make some ice pops, so why not share my little recipe on the blog? I would like to call them “Miku-sticks”! Since I love basil, raspberries, coconut and lemon, I decided to make some mixes with these ingredients, but of course you can make them however you like, that’s the fun of homemade popsicle sticks!
Raspberry + Basil : I cut the basil into small pieces and mixed it together with the raspberries and quark. I also put some honey for a sweeter taste but this is completely optional.

Raspberry + Coconut : I mixed half coconut milk and half quark, added the raspberries, smashed them all together and finally added some coconut flakes. Honey is also optional, since coconut milk is sweet enough it’s not necessary, but I added honey anyway! I love it sweet!

Basil + Lemon : I cut the basil into small pieces and mixed it together with the quark. Then I tore some lemon peel and squeezed in half a lemon and then blended!
Lemon + Coconut : I tore some lemon peel and mixed it with half coconut milk and half quark, and of course some coconut flakes!
When everything was mixed and prepared with my favorite essentials, I poured the mixes into the plastic ice cream container. I put them in the freezer for half an hour, took them out and put the wooden sticks in, put them back in the freezer and left them in there overnight. How long it should be in the freezer depends on the size of the popsicles and how long you want to wait. I think 5 hours is enough!
When they came out I let them sit for a while so I could take them out of the cases and later it was time to enjoy!! Or well, I had to decorate and take some pictures before, but I just tried some and they are amazing! 😉

All summer long, we have been in a state of extreme homesickness in our house. Chase LOVES popsicles and thinks they are such a treat and I love making them at home so I know exactly what goes into them.
Homemade toasts are a great way to incorporate fruits and vegetables into Chase’s diet in a fun way, and he also likes to be involved in the toasting process, so it’s a win-win. (We use this loaf pan that I bought on Amazon several years ago.) We’ve made everything from coconut and orange scallions to banana strawberry and chocolate peanut butter.

And now in a blog post that talks about bread making and happy summer memories, I’m going to break that image and say that one day last week I was almost in tears at the end of the day after dealing with a baby who wouldn’t the nap and wanted to be held all day and a trio that seemed to be able to communicate only with the whiniest voice in all the land. I accomplished nothing, our house was a disaster, and I’m sure countless spoonfuls of peanut butter counted as my “meals” for the day.
We try to limit TV in our house for the sole reason that it usually leads to a very fussy child and a child who then asks for TV over and over again, but sometimes mommy needs Daniel Tiger’s help. And sometimes Daniel Tiger hits the ball out of the park and manages to make a positive impact on Chase and I want to call the producers of the show and say BLESS YOU great people.
I let Chase watch two different episodes of Daniel Tiger last week that focused on eating vegetables and trying new foods and by the end of the show he was eating red peppers and asking for a “banana swirl” for dessert aka Daniel’s fake ice Tiger’s only banana cream. (By the way, Chase has tried red peppers at least 10 times before and hated them. Daniel Tiger is
After making countless ice creams this summer, I’m not sure why I never thought to make a healthy version of homemade ice cream, but sometimes inspiration strikes in the form of a musical tiger with a gift to entertain the kids.

I promised Chase that we would make Daniel Tiger’s “banana” together the next day, so we could work in the kitchen and make a healthy, kid-friendly, dairy-free, all-frozen fruit, MCT oil, syrup “ice cream” maple and coconut milk. Not only did Chase love it – especially when we topped his ice cream with sprinkles – but so did Ryan and I! It was so delicious and perfect for a healthy dessert or lunchtime snack that tastes like a treat.

Important Note: If you expect to enjoy this ice cream after it has been in the freezer for more than two hours, you may need to let it thaw a bit in the refrigerator for 10-30 minutes before serving.
We don’t have cable, so most of Chase’s shows can be found on Netflix or random DVDs, but he loves Super Wings, Daniel Tiger, Chuggington, Paw Patrol, and Little Baby Bum. His favorite movie is, without a doubt, How to Train Your Dragon.
