How To Cook Pizza Dough At Home – 22 Quick and Easy Recipes in 30 Minutes (or Less) + 5 Chef Secrets to Help You Cook Better!

If you want the perfect crust for homemade pizza, stromboli or calzone, make your own pizza dough. This simple process requires five basic ingredients—flour, salt, yeast, oil, and water—and takes just ten minutes to mix and knead. Just remember to let the pizza dough rise for at least 90 minutes in a warm, draft-free place in your kitchen before using it. This recipe makes 2 pounds of dough, enough for two large pizzas, four separates, two stromboli, or four calzones. You can make the dough up to two days in advance and it freezes great too.

Attach the mixer to the dough hook and mix on medium to low speed until the dough is smooth and elastic, 5 to 7 minutes. (Alternatively, you can knead the dough by hand.)

Cover the bowl with plastic wrap or a damp kitchen towel and let the dough rise in a warm place until doubled in size, 1 to 2 hours.

There are several options for letting the dough rise: a sunny spot in your home, near a vent (in the colder months), or even on top of a kitchen appliance that generates some heat as it runs (like your refrigerator). If you’re lucky enough to have a proofing device in your oven, use it. If not, but you want to use the oven, turn on the interior light of the oven; this will generate enough heat to create good conditions for the dough to rise.

Place the dough on a lightly floured surface. Cut the dough in half and roll each part into a ball. If you are not using the pizza dough right away, brush the dough balls lightly with olive oil. Place in freezer bag(s) and seal tightly, squeezing out all air. Store in the refrigerator for up to 2 days. When the dough is ready to use, let it sit on the counter for 30 minutes to warm up before stretching.

When it comes time to shape the pizza dough to bake, you can stretch it into any shape, size or thickness (just keep in mind that a thicker crust will take longer to bake). Simply press and stretch the dough with your hands, dusting with more flour if necessary.

Every pizza recipe is a little different, but as a general rule of thumb: Preheat the oven to 500°F and set the oven rack to the lowest position. Lightly dust a 13×18-inch pan with cornmeal. Place the stretched dough on the baking sheet and gently stretch it again so that it keeps its shape. Spread the sauce over the dough, leaving a 1/2-inch border around the edges. Place the baking sheet in the oven and bake for 5-7 minutes, until the crust is partially cooked. Remove from the oven and scatter the cheese and toppings over the sauce. Return the baking sheet to the oven and cook until the crust is golden brown and the cheese is melted and bubbling, 4 to 6 more minutes.

If you are not using the pizza dough right away, brush the dough lightly with olive oil after the initial rise. Place in freezer bag(s) and seal tightly, squeezing out all air. Store in the refrigerator for up to 2 days. When the dough is ready to use, let it sit on the counter for 30 minutes to warm up before stretching. The dough can also be frozen for up to 3 months. When you’re ready to use, thaw in the refrigerator overnight (or at least 12 hours), then let it warm on the counter for about 30 minutes before stretching and continuing to make the pizza.

Knead the dough: Mix the yeast with warm water and a pinch of sugar and let it rise for 5 minutes. (It should foam at the top, which means it is active. If not, the yeast may be old). Add the remaining water, salt, vinegar, and olive oil to a mixing bowl. Gradually add the flour, kneading the dough on medium to low speed for about 7 minutes.

Proof: Transfer the dough to a greased bowl, cover with a dry tea towel and let it rise for about an hour or until it has doubled in size. Divide the dough into 2-3 equal pieces (about two 14-inch pizzas or three 9-inch pizzas).

Roll into a circle:  Lightly spray a work surface with cooking spray or lightly flour. Use a rolling pin or your hands to roll and stretch the dough to the desired size.

Dust a pizza crust with a little cornmeal and place the rolled out dough on top. The cornmeal will help the dough slide onto the pizza stone, grill, or into the pizza oven. (If you don’t have a pizza peel, you can place the pizza crust on a sheet of parchment paper to lift it and place it on a hot pizza stone or baking sheet.

To make ahead: Knead the dough, place it in a large buttered bowl with a tight-fitting lid and refrigerate for a few hours or even overnight. Remove from the fridge and allow to come to room temperature for easy unrolling. You can also roll out and pre-bake the dough, add the toppings and store in the fridge for grab-and-go pizza style.

To freeze: Once the dough is mixed, wrap it in plastic wrap and place it in a freezer container for up to 3 months. When ready to thaw, place in a buttered bowl, cover, and refrigerate until completely thawed (about 24 hours). Allow to come to room temperature for easy unrolling. You can also freeze pre-baked dough with or without filling.
