Easy Homemade Ice Cream Sandwiches – Homemade Ice Cream Sandwiches Chocolate cookies with creamy homemade vanilla ice cream in the middle for a delicious frozen treat! After you make my no-churn ice cream for this treat, you’ll want to make another batch right away to enjoy on your own!

Ice cream sandwiches are the perfect summertime treat. Of course, we’re currently in the middle of July, a month that consumes a lot of ice cream sandwiches. So, instead of going out and buying this frozen treat, make your own!

Easy Homemade Ice Cream Sandwiches

Ice Cream: You only need four ingredients and no special equipment for no-churn ice cream. Be sure to use unsweetened condensed milk (not evaporated milk).

Mini Chocolate Chip Ice Cream Sandwiches

Room Temperature Ingredients: Using room temperature ingredients (especially butter and egg) will give you the best results when making these chocolate cookies.

Cocoa: I tested sandwich cookies with Dutch-processed and regular unsweetened cocoa powder. We all prefer plain unsweetened cocoa powder to Dutch-processed ones. However, you can use anything.

I won’t lie, the process of making these ice cream sandwiches takes some time and patience. But, it’s worth it! After you’ve mixed the cookie dough, roll it out on parchment paper into a 12×15-inch rectangle.

Place the rolled-out cookie dough sheet in the refrigerator to chill for 25-30 minutes. Refrigerating the dough will firm it up and make it easier to work with. You will need to do this for each sheet of cookie dough you roll.

Chocolate Cookie Ice Cream Sandwich — Salt & Baker

When ready to cut the dough into rectangles, you can use a 4×2-inch paper template to help, or use a cookie cutter of that size. After cutting the rectangles, roll out any excess dough and place in the refrigerator to chill again, ready to cut more cookies. I was able to cut out 24 cookies for a total of 12 ice cream sandwiches.

And, of course, you can make the sandwiches in any shape you like! Grab your favorite cookie cutter or create your own shape for ice cream sandwiches.

First, cover the sandwiches with plastic wrap and freeze for at least 8 hours. After that, I like to wrap each sandwich in plastic wrap and store it in a freezer-safe container. They will keep in the freezer for up to a month.

Of course! (I really hope you try my ice cream recipe too; it’s really creamy and velvety…). Anyway, I digress. Yes, you can use store bought ice cream. If you do, let it soften slightly before pressing it into a 9×13-inch baking dish.

Then, place the ice cream pan in the freezer for an hour to refreeze before cutting into rectangles. You can also try other flavors of ice cream!

I love summers, but it’s hot and we’re always looking for something to cool ourselves down! So this past memorial weekend, I made these delicious homemade ice cream sandwiches for us to enjoy and stock up on in our freezer for weeks to come.

Summer is still a few weeks away from officially kicking off, but the weather is already hot in Dallas. I stayed here! We already eat a ton of ice cream, but in the summer, we eat it almost every day!

Whether we’re sipping it from a cone, spooning it out of a bowl, sipping it through a straw, or eating it sandwiched between two chewy cookies, it’s something we can’t get enough of during the summer!

I made this ice cream sandwich recipe with chocolate chip ice cream filling. But feel free to change them up a bit and make them with your favorite ice cream flavor. It works just as well with vanilla ice cream, cookie dough ice cream, or brownie bits ice cream! The sky is the limit.

Few desserts are enjoyed around our house like the classic combo of cookies and ice cream. It’s my husband’s all-time favorite dessert duo, and it’s no surprise that my kids never turn down a candy covered in rainbow sprinkles.

I sandwiched your ice cream flavor between two wonderfully soft and chewy chocolate chip cookies. A quick roll in sprinkles and the ultimate dessert for any celebration is complete!

First of all, homemade is the way to go because we can control the exact shape of the baked cookies and the result after they are frozen. In order for the cookies to still be soft and soft (read: bite-able!) when they’re cool, we need to start with cookies that are just chewy and soft.

Balancing the ratio of white and brown sugars is key to achieving the final texture. Too much white sugar in the recipe will result in crispier cookies. As much as I love crunchy sweets, biting into a big ice cream-filled cookie sandwich is neither the time nor the place for crumbs!

Homemade Ice Cream Cookie Sandwich

I increased the brown sugar in this recipe, which means more molasses and more moisture. The result? Soft, chewy, perfectly bite-sized cookies, even in their frozen-solid state.

Obviously, it’s important to cool your homemade cookies completely before sandwiching them with ice cream. We want to give these sweets the best chance to retain their shape.

It is also important to work in stages. While it’s not necessary to create perfect, cookie-cutter pucks of ice cream, I love the uniformity of the technique. You will need to spread the ice cream in a 13×9-inch pan and then freeze it in a flat layer. After a few hours you can use a circular cookie cutter to stamp out perfect-sized rounds based on the size of your cookies. Don’t go through these extra steps? Reach for the ice cream scoop and let the sandwiching begin!

After sandwiching the cookies with the ice cream, immediately roll them in the sprinkles for decorative touch sticks. Place the ice cream cookie sandwiches on the baking sheet and return them to the freezer for an additional hour. Once they are set, transfer them to a large, sealable plastic bag. Alternatively, you can wrap each ice cream sandwich in plastic wrap to keep ice crystals from forming.
