Potato Chips Recipe: Healthier When Made Yourself, In Your Way
So simple, healthy and easy to make, once you make your own crispy baked potato chips, there’s no need to go back to the bag!
Prepare the potatoes: Using a sharp knife, food processor attachment, or mandoline, thinly slice the potatoes to about 1/16 of an inch. Dry the potatoes to remove excess moisture. In a medium bowl, toss the potatoes with oil and salt (or you can go a step further and lightly coat each side with oil while still on the cookie sheet using a silicone brush – one less thing to wash that way, which was my method).
Baking: Place the potatoes in a single layer on a baking sheet, spreading them out so they don’t harden each other. Place in the oven and bake for 10 minutes. Carefully remove from the oven, turn each chip and bake for another 7 – 9 minutes, keeping an eye on them at the end so they don’t overcook. Remove any that feel cooked or completely burnt. Once baked, remove from oven and let cool for 2-5 minutes.
The thicker you cut the potatoes, the longer it will take to cook. I recommend cutting them to 1/16 for best results. Any thicker and your results will vary.

Homemade Barbecue Potato Chips Recipe
This is the most essential part of making homemade potato chips. This will draw out the excess starch in the potatoes so that they become crispier chips when fried.
You will want to soak your sliced potatoes in the refrigerator for about 1 hour. This time is enough to remove the starch from the potato.
Make sure to dry them well before frying them otherwise they won’t be as crispy as you want them to be and the water in the potatoes may cause the oil to split.
Large potatoes work best so the ones we use for this are russet potatoes, otherwise, you can also use potatoes labeled as baking potatoes for this.
