In my house, this qualifies the chef for superhero status and we all get to use a day like that every once in a while! Keeping several good recipes in your repertoire that can be made in just 15 minutes is one of the smartest things you can do. Find a pair your family loves, and keep those ingredients on hand so you have something to fall back on. Even on the busiest, craziest of nights, we can carve out 15 minutes to make dinner together if we have a back-up recipe or two to turn to and a pantry with basic meal builders ready for us!

It’s a great idea to keep your pantry stocked with key ingredients so you never have to worry about having nothing to build a meal on. This post is all about the classic meal builders that I always keep on hand in my pantry and it really helps!

These are excellent building blocks for quick meals at home, so it’s a good idea to keep a few in the pantry for those days when your plan has to change unexpectedly and you don’t have time to run out of ingredients. Combine any of them with veggies and maybe some meat and you have a quick meal. Bonus: Most of them are also inexpensive.

So here’s my biggest time-saving tip. You are ready? My biggest ally in quick cooking is having a variety of pre-cooked meats and even beans ready to go and stashed away in the freezer. This opens the door to a huge variety of meals that can be prepared in minutes instead of hours because the hardest part, cooking the proteins, is already done in advance!

Quesadillas are a quick and easy favorite in our family. I wanted to take the concept and put a different spin on it. Something other than Mexican.

They are filled with chicken (I used rotisserie chicken I had in the freezer), garlic cream cheese, spinach, tomatoes, artichoke hearts, and parmesan.

The beauty of quesadillas is that they are easy to make to order. So, if you have someone in the house who turns up their nose at the good stuff, give them a simple chicken and cheese option.

We love jambalaya, but it takes a while to cook it in the oven. I tried making it in the slow cooker, but it didn’t turn out very well.

Then I realized it could be done in a pan, using a similar method to the one I use for fried rice. The rice cooks separately, in chicken stock instead of water. Once added to the ingredients in the pan, it all comes together similar to a traditional jambalaya.

The upside, of course, is that it’s much quicker to make on the stovetop. If you use jasmine rice, it will only take 15 minutes for the rice to cook as well, and the whole dish will be ready in a short time. Jasmine is my favorite rice for this reason. With other long grain rices, I’ve found that it takes about 30 minutes for it to become tender.

Start the rice, then start chopping and cooking the other ingredients in the pan. To keep it in the 15-20 minute range, you’ll also need to use pre-cooked chicken. I keep rotisserie chicken in the freezer for quick meal prep.
