I’m married to a man who loves a good snack, especially when it’s healthy, and especially when there’s some kind of nut butter involved.

So for the past few weeks, I’ve switched from making my regular granola to tweaking a new recipe for super portable granola.
And Barkley has been more than a willing taste tester. We were looking for a recipe that tasted like the classic, chewy, peanut butter, mini chocolate chip granola bars we loved as kids. (Anyone else carry it in your lunchbox?) But of course, as adults, we wanted a recipe that was naturally sweetened, packed with protein, and made with everyday ingredients that we could easily Take it to our warehouse. I was also particularly fond of the granola bar recipe, which was soft and chewy, but didn’t completely fall apart at room temperature, as many bars tend to do.

I make at least 20 good sized bars from this recipe. I think it might be the equivalent of 3 boxes of Quaker Chewy Granola, so even though the butter and honey are more expensive, it’s still very affordable and much healthier.
Lunch packing tip: Have the kids (or anyone else) bring home plastic bags each day and just put a new strip inside. Easy way to save on packaging and don’t forget to pick up a bar every day! Or better yet, try reusable bags – I’ve reviewed a bunch of them to help you find the best one!
