These donuts need yeast. If you are familiar with baking with yeast, you shouldn’t have a problem. If you are new, we recommend following T’s instructions to help you out.
Yeast. Dissolve the yeast in ¾ cup warm water. allocated Heat 2 cups of milk in the microwave for 2-3 minutes.
Wet material. Add the shortening (room temperature) to a large bowl while the milk is heating. Pour in the hot milk and whisk until combined (there will still be some clumps). Add salt, sugar, nutmeg and cinnamon. Stir well with a wooden spoon. Add 4 eggs and mix well.

KNEAD. Sprinkle flour on a clean surface and pour the dough on it. Gently knead the dough until the surface is sticky to the touch.
Get up The dough should be very soft, but not so sticky that you can’t handle it easily. Place the soft dough in a lightly greased bowl. Cover the bowl and let rise for 1 to 1½ hours. The dough should almost double in size.
Cut + get up again. Place the dough on a lightly floured surface and roll out to about 1 inch thickness. Cut the donuts as close together as possible. Save the middles for the donut holes. Transfer the donuts and holes to a clean surface. Cover and let rise for 1 to 1½ hours.
FRY. Once the donuts and holes have risen, fry them in a large frying pan or Dutch oven in vegetable oil until golden brown. Once roasted, drain on a cooling rack. Be sure to fry the holes too, as they are good to eat!

A cake donut uses baking soda or baking powder as a leavening agent and is cake-like in texture, similar to an old-fashioned donut recipe. We also have an even easier homemade donut recipe that uses a can of Pillsbury Biscuits, Homemade Biscuit Donuts.
Flat donuts can be caused by a few things. The two main culprits could be that the yeast was not activated properly or the dough was not proofed properly.
Donut cutters. The easiest way to shape homemade donuts is to purchase a cutter designed specifically for donuts. If you don’t have one, you can use cookie cutters, or a large round cookie cutter and a small circle cookie cutter to cut out the center. Another idea is to find a large-mouth cup and a smaller cup for the center.
The most time-consuming part of this easy donut recipe is waiting for the dough to proof. Accelerate the first growth by creating a warm environment. There are a few ways you can do this.

The best part? Making donuts is mostly hands-off. You can spend most of this recipe flipping through the book or binging the latest TV show while you wait for your dough to rise.
Am I saying that you never buy a “hot now” donut from the store? no But you will definitely taste the difference and experiment with your favorite flavors at home. Plus, it’s a great opportunity to get the kids involved in helping to knead and shape the (pre-frying) dough. Once the fry station is all packed up, kids can test their artistic eye with different glazes and decorations.

If you don’t have a 3-inch round cutter, you can use a wide-mouth cup or jar with a thin lip. For the 1-inch hole cutter, you can use the wide end of a Wilton or Atte frosting tip or a twist-off wine or liquor bottle cap.
How To Make Homemade Donuts
You are the captain of your own donut journey, so feel free to play around with shapes and sizes depending on what you like and the tools you have on hand. You can also make these into squares or heart shapes.
If you prefer to shape by hand, you can skip the rolling and cutting. Divide the dough into balls weighing about 80 grams. Note, these will take a little longer to grow during the second proof. The good news is that you can fill it with pastry cream, ganache, or fruit curd after frying.
I like to proof this recipe overnight in the fridge for several reasons. Maintaining the refrigerator temperature is easy, so you have complete control during this proofing step. Cold dough is also easier to roll, less sticky, and seamless to cut. You’ll feel less rushed to cut your donuts and move on to the next step.
Do yourself a favor and make the dough the night before, let it proof overnight, and then proceed with the recipe.
