Cooking A Chicken With Beer Can – Every month for the past three years I have been writing recipes for charter guests or crew. Well, chefs, this is for you. As a team, we all have a free day to visit the local beach, barbecue and have some fun in the sun. But the team does not finish cooking. In most cases, this is up to us, the chefs.

When the chicken is grilled, it requires minimal attention, so we can enjoy the good company of our teammates, relax and get distracted from work.

Cooking A Chicken With Beer Can

I really like the taste and texture of this chicken. Preparing additional chickens is always a great idea. The smoky, “hoppy” cooking method adds depth to other dishes, including simple dishes like sandwiches or rolls, and more complex ones like fried rice, broths, and soups.

Vertical Roasted (beer Can) Chicken

On a cutting board, remove the giblets and pat the chicken dry (inside and out) with paper towels. Remove the nose and any feathers or excess fat from the chicken.

In a large bowl, add vinegar, oil, soy, and dried herbs. Mix well. Dip the chicken in the mixture, allowing it to coat every surface.

Place the chicken in a 1-litre ziplock bag and pour in the liquid, spreading it over the chicken, sealing the bag and removing excess air. Brine for the night in the refrigerator.

Preheat your gas grill to 375-400 degrees Fahrenheit (or wait until the charcoal is at its hottest and begins to slacken).

Smoked Beer Can Chicken Recipe

Remove chicken from brine and pat dry with paper towels. Don’t remove too much oil, rosemary, or thyme.

(Out of hours) Take a few sips of the beer, leaving about half of the can, then insert the can into the slot until the topping is held tightly in place by the can.

Place the chicken on a disposable baking sheet (a pie pan is ideal), leg and jar side down. Place in the middle of the grill and cover with a lid.

After 30 minutes, the chicken should start to brown and the beer, oil, and juice should be collecting in the pan as shown in the photo. Use this liquid to water your chicken every 10 minutes for another 40-50 minutes.

Juicy Beer Can Chicken (beer Butt Chicken)

Carefully remove the cooked chicken from the grill. Remove jar and filling before slicing. I grilled potatoes with chicken and made a salad ahead of time, leaving me time to enjoy the company and a few beers while things take care of themselves.

The beer steams the chicken, keeping it very moist inside while frying, while still providing the desired crispiness on the outside. Beer Can Chicken is my absolute favorite grilled chicken recipe. Perfect for backyard parties, no one gets stuck BBQing while everyone else is away. You put the chicken in to fry and leave it until done.

I prefer to use beer in this recipe. In Saskatchewan we call this recipe Beer Butt Chicken and everyone uses their favorite brand of beer. You should empty half of the jar so you can enjoy the other half while you cook the chicken.

Beer Can Chicken

Mix in your favorite chicken seasoning. I like to use thyme, smoked paprika, garlic powder, sage, salt and pepper. If you like it spicy, add some red pepper flakes.

Brush the chicken with olive oil. This will help the spice mixture stick to the chicken and make the skin crispy.

Pour about half of the beer out of the can (of course you drink it). Put the remaining spice mixture and chopped onion into a beer can.

Cooking time depends on the size of your chicken. A 3 pound chicken will take about 1 hour. Roast until the chicken reaches an internal temperature of 165ºF.

For this recipe, I used a 10.25″ Lodge cast iron skillet. Cast iron pans are incredibly durable, and this one is budget-friendly.

With proper care, your cast iron skillet will last for years. In my opinion, a cast iron skillet is a kitchen treasure and everyone should have at least one. Just don’t drop them, they’re heavy as they all crawl out.

Use a CAN of beer that you enjoy drinking. For this recipe, the beer must be in a can, NOT a bottle. So beer CAN chicken. I had a Budweiser in the fridge so I went with it. No frills, nothing fancy.

Beer Can Chicken

This part can be a little tricky and works best if you have an extra set of helping hands. After the chicken is rested and cool enough to handle, wrap a paper towel around the base of the beer can to keep it still. Meanwhile, a second person holds a paper towel in each hand and grabs a chicken and removes it from the beer can. Transfer the chicken to a cutting board.

Any type of beer in a can is perfect for beer can chicken. We usually use light Pilsner beers like PBR or Coors.

Try to find a 4 to 5 pound chicken. If you are using a smaller chicken, you will need to shorten the cooking time.
